Ingredients

1 lb Beef Tenderloin

Salt, Pepper, Garlic

Onions

Bleu Cheese Crumbles

Garnish: Microgreens

Wonton Skin

Preparation

Step 1

  • Grill the beef tenderloin till it reaches 135 degrees (medium rare).

    • Let it cool down completely.

    • Cut into very thin slices when it’s cooled.

Step 2

  • Caramelized onions - 2lbs

    • Cut into fine julienne.

    • Sauté with oil on low heat for half an hour until golden brown.

Step 3

  • Cut Wontons into triangles and deep fry for 1 minute at 350 degrees.

Step 4

  • Putting together

    • Place Wonton.

    • Beef.

    • Caramelized Onions.

    • Bleu cheese crumbles.

Step 5

  • One it’s placed all together. Carefully use a torch flame to melt the cheese.

Step 6

  • Sprinkle Microgreens for garnish on top.
