1 lb Beef Tenderloin
Salt, Pepper, Garlic
Onions
Bleu Cheese Crumbles
Garnish: Microgreens
Wonton Skin
Preparation
Step 1
Grill the beef tenderloin till it reaches 135 degrees (medium rare).
Let it cool down completely.
Cut into very thin slices when it’s cooled.
Step 2
Caramelized onions - 2lbs
Cut into fine julienne.
Sauté with oil on low heat for half an hour until golden brown.
Step 3
Cut Wontons into triangles and deep fry for 1 minute at 350 degrees.
Step 4
Putting together
Place Wonton.
Beef.
Caramelized Onions.
Bleu cheese crumbles.
Step 5
One it’s placed all together. Carefully use a torch flame to melt the cheese.
Step 6
Sprinkle Microgreens for garnish on top.
